Description

These hoagies are creamy, cheesy and delightfully flavorful (thanks to the parsley, green onions and garlic). I’ve been making these ever since for a quick, weeknight meal that is faster than fast to put together, and my kids eat it up without gagging or complaining. And if that isn’t a successful meal, I don’t know what is.

Ingredients

  • 1 loaf French Bread, Halved Lengthwise
  • 2 cups Cooked, Shredded Chicken
  • ½ cups Light Mayonnaise
  • ½ cups Reduced Fat Sour Cream
  • 2 whole Green Onions, Thinly Sliced
  • ½ teaspoons Garlic Salt
  • ⅓ cups Fresh Parsley, Chopped (or 2 Teaspoons Dried)
  • 2 cups Shredded Cheese (I Like To Use A Combination Of Monterey Jack And Sharp Cheddar)

Preparation

Preheat oven to 350 degrees. Place french bread on a large baking sheet. Mix all topping ingredients together in a bowl. Spread topping evenly on top of both lengths of french bread. Bake for 15-20 minutes until bubbly and edges are lightly browned. Slice into pieces and serve immediately.

I tried this the other night and was really happy with it, although I didn’t have any parsley! My husband asked me to add mushrooms, and I did, and I thought that was also a nice addition.

It totally reheats well in the microwave as well, as I had some for lunch the next day.

I was expecting to like this, but I didn’t have high hopes for my kids. They loved it! And asked me to make it again in two days! Wow!

I tried this recipe for dinner tonight, and all 3 of my picky kids liked it! What a winner of a recipe! I used all reduced fat dairy products and served it on whole wheat french bread, so it was quick, easy, healthy, and everyone loved it. This one is a keeper!

This was a really good and easy recipe. I poached the chicken breasts (2) in beer for some added flavor and slathered the resulting mix on half of a large Italian loaf. My wife and I loved it, as did 2/3 of our kids (picky ones they are). It made great leftovers as well.

We had this for dinner last night and LOVED it. I can’t wait to have some left overs for lunch. The flavor was great and it was super simple to make. This will definitely be permanently added to my recipe box!

I actually really liked this, it was my picky husband and kids who were having a hard time trying something new. It did have terrific flavor and was incredibly easy. I did notice, however, that it was almost too cheesy and saucy (if there is such a thing!) The obvious solution would be to cut the mixture in half or double the bread. Over all, pretty good!

YES! YES! YES! This was fabulous and a perfect summer dinner with some fresh fruit and a salad. I was doubtful it would have enough flavoring, but it was PERFECT!
