  • 1 cup Vegetable Broth
  • 2 Tablespoons Rice Wine Vinegar
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Canola Oil
  • ¾ pounds Boneless And Skinless Chicken Breast, Cubed
  • 1 Tablespoon Fresh Ginger, Minced
  • 3 cloves Garlic, Minced
  • ½ teaspoons Crushed Red Pepper
  • 4 ounces, weight Crimini Mushrooms, Sliced
  • 1  Red Bell Pepper, Sliced Thin
  • Cooked White Or Brown Rice, To Serve
  • 2 Tablespoons Sliced Green Onions, For Garnish

Preparation

In a small bowl, stir together brown sugar, cornstarch, vegetable broth, rice wine vinegar and soy sauce until smooth. Set aside.

In a large sauté, heat oil over medium-high heat. Add chicken, ginger, garlic and crushed red pepper. Cook for 1 minute. Add mushrooms and bell pepper and cook for an additional 3 minutes. Stir in sauce, cover and cook for 5–6 more minutes, or until chicken is fully-cooked. Remove from heat.

The sauce on this never really thickened up enough for what we like, and the flavors weren’t very “exciting”.
