Description

These little guys are a blend of smoky, sweet and spicy! Use the sauce on chicken or in a sandwich. It’s yummy!

Ingredients

  • FOR THE MEATBALLS:
  • ½ cups Breadcrumbs
  • ½ cups Water
  • 2 pounds Lean Ground Beef
  • 1 whole Sweet Onion, Diced
  • 1 whole Egg
  • 1-½ teaspoon Salt
  • Olive Oil, For Frying The Meatballs
  • _____
  • FOR THE BARBECUE SAUCE:
  • 1 cup Ketchup
  • ½ cups Brown Sugar
  • ½ cups Honey
  • 3 Tablespoons Chipotle Peppers In Adobo Sauce
  • 4 teaspoons Apple Cider Vinegar
  • 3 teaspoons Worcestershire Sauce
  • ½ teaspoons Salt, Or To Taste
  • 1 pinch Black Pepper To Taste

Preparation

In a small bowl, add the bread crumbs to the water. Stir to mix well and set aside.

Combine the ground beef, onion and egg. Mix in the wet bread crumbs and salt. Shape the mixture into meatballs about the size of golf balls.

Heat a large skillet on medium high. Pour in a little olive oil. Add meatballs and brown on all sides. Then cover and allow to simmer for about 15 – 20 minutes or until done. Remove to a large bowl.

Makes about 30 – 40 meatballs

For the sauce:

Combine all ingredients in a food processor and blend until very smooth, 1-2 minutes. If a thinner consistency is desired, add a tablespoon or two of water to thin the mixture.

Makes about 2 cups of sauce.

In a small saucepan or in a microwaveable bowl, heat sauce until warm and pour over meatballs. Stir gently to coat all the meatballs.

Serve over rice.
