Ingredients

  • FOR THE RICE:
  • 1-½ cup Brown Rice
  • 2-½ cups Water
  • 2 teaspoons Butter (optional)
  • 1 teaspoon Salt
  • _____
  • FOR THE CHICKEN:
  • 4 whole Chicken Legs
  • ⅓ cups Honey
  • 2 Tablespoons Melted Butter
  • 1 Tablespoon Prepared Mustard
  • 1-½ teaspoon Curry Powder
  • 1 teaspoon Salt

Preparation

For the rice, combine the rice, water, butter, and salt in a 2-quart baking dish. Bake at 350F for an hour and a half.

For the chicken, place the chicken in a 9×13 inch casserole dish. Mix the honey, butter, mustard, curry, and salt and pour over the chicken. Bake at 350F for about and hour and a half, basting 3 or 4 times with the pan juices. Serve with the rice, And don’t forget to pour some of those delicious pan juices over everything!

I don’t even like chicken legs and this was very tasty. The sauce was amazing and so easy to put together. Yummy!
My rice still wasn’t done after the cook time…..about half of it was still crunchy. But I never have good luck with brown rice anyway – so that was probably user error. :-)
