Description

Fresh refried beans are so much better than the canned version and they are easy to make.

Ingredients

  • 3 cups Pinto Beans
  • 3 Tablespoons Butter
  • 5 pieces Jalapeno Rings
  • ½ Tablespoons Salt
  • ½ Tablespoons Garlic Salt
  • ½ teaspoons Onion Powder
  • ½ teaspoons Cumin
  • 1 Tablespoon Chili Powder
  • 1 cup Cheese

Preparation

Rinse and soak 3 cups of beans for an hour or longer. Then rinse them again, put them in the crock pot with the butter and cover them with water. Make sure that they are always covered with water, throughout the cooking time. If you need to add more water later in the day, first bring it to a boil in the microwave before adding it to the crock pot. Cook the beans on high for 5-6 hours, or until they can easily smash between your fingers.

When the beans have about a half hour left to cook, add the jalapeno rings, salt, garlic salt, onion powder, cumin and chili powder.

After that cooks for about half an hour, scoop out the beans with a slotted spoon and place them into the food processor and puree with the cheese. As needed, add liquid from the beans as you puree until you get the desired consistency.

I’ve used this recipe a couple times and it never fails to be good! Very simple, makes the whole house smell like yummy beans…it’s great! I like to add extra peppers for some more heat. So good!

This came out great! My daughter loves to dip her veggies in it! The only problem I had was that it doesn’t keep well. seemed very gummy and paste like when reheated. Next time I will keep the bowl cooked beans in the fridge and mix as I need them.
