Description

Smoked sausage, caramelized onions, sweet peppers and lots of pineapple for a new twist on our favorite pizza.

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • 4 cups Thinly Sliced Onions
  • 2 whole Pizza Dough, Enough For 2 Medium-large Sized Pizzas (homemade Or Refrigerated)
  • 1 cup Marinara Sauce
  • 14 ounces, weight Smoked Sausage (I Used Petit Jean) Sliced Into 1/2 Inch Slices
  • 2 cups Sliced Sweet Peppers
  • 3 cups Shredded Colby-jack Cheese
  • 1-½ cup Pineapple Cut Into Small Tidbits
  • ¼ cups Chopped Fresh Cilantro

Preparation

Preheat oven to 450°F.

Place olive oil and butter in a large skillet over medium-low heat. Add onions and cook, stirring often until caramelized, about 10 minutes. Remove from heat and set aside.

Roll pizza dough out into desired shape. I used my 2 largest cast iron skillets. Rimmed baking sheets work well too. Place pizza dough into skillet or onto baking sheet.

Spread 1/2 cup of marinara sauce over one pizza dough. Top with half of the smoked sausage, half of the caramelized onions, half of the peppers and 1 1/2 cups shredded cheese. Top with 3/4 cup pineapple and 2 tablespoons of cilantro.

Repeat with the other section of dough and the remaining ingredients.

Bake for 35-40 minutes or until crust is browned and cheese is bubbly.(If crust is browning too quickly, turn oven down to about 400-425°F.) Remove from oven and allow to cool 10 minutes before serving.
