Description

Peanut stew (or groundnut stew) is ubiquitous throughout West Africa. After doing some research, I came up with the recipe below. And I’ve got to tell you, it is really, really good. I will definitely be making this again. It is a typical Ghanian recipe, which is different from other variations because it includes hard boiled eggs (but feel free to omit them if that sounds a bit weird to you).

Ingredients

  • 3 Tablespoons Canola Oil
  • 1 whole Chicken, Cut In Pieces
  • ½ Tablespoons Ginger, Shredded
  • 1 whole Onion, Minced
  • 3 cloves Garlic, Minced
  • 2 whole Serrano Chile Peppers, Deveined And Seeded
  • 1 cup Crushed Tomatoes
  • 4 cups Chicken Broth
  • 1 cup Peanut Butter
  • 2 cups Okra (or Green Beans)
  • 6 whole Hard Boiled Eggs (optional)

Preparation

Heat the canola oil in a heavy-bottomed pan over medium-high heat. Season the chicken with salt and pepper. Fry the chicken pieces until just brown on all sides (but still raw inside). Remove from the pan and set aside.

Reduce the heat to medium and briefly saute the ginger. Then add the onions, garlic, and peppers until the onions are translucent (about 4-5 minutes). Add the tomatoes and cook for another 5 to six minutes. Add the broth, chicken, salt and pepper and bring to a boil. Reduce heat to medium-low and simmer for 45 minutes.

In a separate bowl, add 1 cup of the simmering liquid to the peanut butter and stir until the peanut butter is smooth. Add the mixture to the pan and then add the okra or green beans. If using hard-boiled eggs, add that as well. (Note: I served my eggs on the side). Simmer for another 15-20 minutes. Serve over rice.

Vegetarian variation: Skip step one. After sauteing the onion mixture, add chopped eggplant, sweet potatoes, carrots, cabbage, yams, bell peppers, or winter squash like butternut when you add the broth. Cook until the vegetables are done (it should be under 45 minutes).

Chicken breast pieces variation: After adding the broth, only cook the chicken for 10 minutes or so before adding the okra or green beans. Then cook until the chicken pieces are done .

Just fiddled my way through this yesterday. Verdict: Yum! For my fiery tastebuds it needed a little more pepper action. I used a couple of large chicken boobs in lieu of the whole chicken (didn’t have one available) and it turned out pretty well. Note: this recipe produces a huge amount of tasty goodness.

This was ok. It could use a lot more tomatoes, and more spice. I’d also recommend boneless skinless meat so it’s easier to eat.

I halved the recipe and still had tons. Mine was really dry though so not sure if that was in part to halving the recipe. It was more like the chicken with a paste rather than a sauce.
