Description

This is one of those too-good-to-be-true EASY recipes. Thanks to my good friend Hetti for creating this masterpiece.

It’s so good everyone will think you spent hours making it (wink).

Ingredients

  • 1 cup Cooked Pork, Cut In Cubes
  • 2 cans (28 Oz. Can) Chile Verde Enchilada Sauce
  • ⅓ cups Jalapenos, Sliced
  • 3 cups Water
  • 3 packages (about 1 Oz. Packet) Pork Gravy
  • 1 package (enough For 10 Servings) Flour Tortillas (any Size)
  • 16 ounces, weight Colby-Jack Cheese, Shredded
  • 8 ounces, weight Sour Cream
  • 1 can (8 Oz. Can) Black Olives, Sliced
  • Lime, For Garnish
  • Tortilla Chips, To Serve

Preparation

In large saucepan combine pork, enchilada sauce and jalapenos.

In separate bowl, add water and gradually whisk in gravy packets until well combined. Add to the saucepan.

Bring mixture to a boil, stirring constantly. Reduce heat to medium/low and simmer 30 minutes. Stir frequently.

Heat tortillas until warm. Add 1/3 cup Verde and roll up into burritos. Smother in additional Verde and garnish with cheese, sour cream and olives. Serve with lime wedges.

This Verde is also great on the side for dipping tortilla chips.
