Description

This chicken is flavorful and easy to make. It is one of my all-time favorite dishes for entertaining .

Ingredients

  • 4 ounces, weight Goat Cheese
  • ¼ cups Yellow Onion, Finely Chopped
  • 2 cloves Garlic, Minced
  • 1 whole Egg
  • ½ cups Parmesan Cheese, Shredded
  • 2 teaspoons Herbes De Provence
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Ground Pepper
  • 4 whole Chicken Breasts, Bone-in, Skin On

Preparation

Preheat oven to 375°F.

For the goat cheese stuffing, in a medium-sized bowl mix goat cheese, onion, garlic, egg, Parmesan cheese, herbs, salt and pepper.

Carefully stuff 2 to 3 tablespoons of goat cheese mixture under the skin of chicken breasts. Avoid tearing holes in the skin as it keeps the stuffing in as the chicken roasts.

Place chicken breasts in a roasting pan. Roast chicken for 40 to 45 minutes if you have medium-sized chicken breasts or if chicken breasts are larger, you may need to adjust the cooking time to 50 minutes.

Note: This chicken is one of my favorite dishes to share with friends because it’s easy to prepare chicken breasts ahead and then place them in the oven shortly before guests arrive.
