Description

A delicious crust for salmon makes this a winner for everyone in the family.

Ingredients

  • 1-½ pound Thickly Cut Fresh Salmon Fillet, Skin Intact
  • ¾ cups Mayonnaise
  • 3 ounces, weight Parmesan Cheese
  • 6 Tablespoons Minced Green Onions
  • 3 Tablespoons Chopped Fresh Dill
  • 2 Tablespoons Minced Red Bell Pepper
  • 1 whole Lemon, Juiced
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350F.

Mix mayo, Parmesan, green onions, dill, bell pepper, lemon juice, salt, and pepper in a small bowl. Spread over salmon to within ½ inch of edges.

Spray a shallow baking dish with nonstick cooking spray and warm in oven 20 minutes. Place salmon skin side down on the hot dish (it should sizzle). Bake 20 minutes or until just flaky. Do not overcook. Salmon should be medium-rare to medium. Skin should be crispy and may be eaten or removed, as desired.

Loads of flavor but does not overpower the salmon. I think this would also work well with tilapia or any other mild fish. We look forward to making again!
