Description

Impressive yet sooo easy, these Cornish Game Hens are a snap to prepare and extremely delicious. Accompanied by celery, carrots, and potatoes, they will make your house smell heavenly while they roast.

Ingredients

  • 1 whole Lemon, Juiced
  • 3 cloves Garlic, Minced
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Fresh Oregano, Snipped Into Small Pieces
  • 1 teaspoon Fresh Thyme
  • ½ Tablespoons Salt
  • ¼ teaspoons Black Pepper
  • 2 stalks Celery, Chopped
  • 2 whole Carrots, Peeled And Chopped
  • 8 ounces, weight Small Potatoes, Quartered
  • 2 whole Cornish Game Hens

Preparation

Preheat oven to 450 degrees. In a large bowl, combine the lemon juice, garlic, olive oil, oregano, thyme, salt and pepper. Add in celery, carrots, and potatoes and toss to coat. Using a slotted spoon, transfer the vegetables to a bowl or plate, reserving the garlic mixture. Brush the hens with some of the garlic mixture. (I put the hens right in the bowl so they soak up all the goodness!) Arrange hens in a roasting pan. Twist the wing tips under the back. Arrange the vegetables in the pan around the hens and drizzle everything with the remaining garlic mixture.

Place the roasting pan on the middle rack in the oven. Roast uncovered for about 50 minutes , or until the vegetables are tender and a meat thermometer inserted into the thigh of each hen registers 180 degrees.

To serve, carefully cut hens in half lengthwise. Remove vegetables from pan and place around hen.

I love a recipe where I can just throw everything in a pan and forget about it for 45 mins to an hour. This recipe was super easy and yummy too.

I thought these were very tasty. My husband said he didn’t think he liked game hens until he tried these.

It’s a fairly simple recipe and easy to make, which is nice since you don’t have to prepare stuffing and cook down a glaze. You just prep the seasoning, chop some veggies and wash up your hens. It’s a snap.

I didn’t peel my carrots (lazy) and I used a turkey roasting pan since it’s the only roaster I have. The hens still turned out just fine and the veggies were a wee bit crunchy but still tasty.

I’ll be making these again!

Cornish hens were on sale last week, so I bought some not knowing what I was going to do with them. Tonight, my almost four-year-old requested “chicken”. This is a child that’s generally food-averse, so I was more than happy to comply with his request … except the only thing that resembled poultry in the fridge/freezer was the cornish hens.
I didn’t have celery or thyme, eyeballed the measurements, and substituted dried herbs for fresh, and they still turned out great. I was shocked that they cooked so quickly, and they met with approval from all.
I’d make this again, with either chicken pieces or cornish hens!
