Description

Light and tasty pasta dish with fresh tomatoes, garlic, basil and chicken.

Ingredients

  • 1 pound Boneless, Skinless Chicken Breasts, Chopped Into Bite Sized Pieces
  • 1 pound Tomatoes, Chopped And Seeded
  • ½ heads Garlic, Minced (1/2 To 1 Whole Head)
  • ½ cups Chopped Basil
  • ¼ cups Olive Oil
  • 8 ounces, weight Thin Spaghetti (WW Is Best)
  • ½ cups Shredded Mozzarella Cheese
  • ½ teaspoons Salt
  • ½ teaspoons Pepper

Preparation

*Fill a large pot of water and begin to boil for pasta

*Mix together the chopped tomatoes, garlic, basil, olive oil, salt and pepper, set aside

*Sprinkle chicken with salt and pepper, saute chicken in a large pan until fully cooked

*Cook pasta according to package directions and drain

*Add pasta to the chicken pan, top with tomato mixture and Mozzarella cheese

*Mix together and serve immediately

I made this last night and it was delicious! Thank you for the great recipe. Also – I added roasted pine nuts to the top at the end, which added a nice texture and delicious flavor.

This was just fabulous! I “borrowed” some fresh basil from a friend’s garden and whipped this up in no time using some leftover cooked chicken and my family could not get enough of it! It tasted even better as leftovers because the flavors blended even more.

Wonderful!! It’s going in my recipe file immediately!

Made this tonight and it was excellent! I eliminated the chicken but everything else I did according to recipe using fresh tomatoes and fresh basil from our garden. Really fantastic!
