Description

Round steak adds another dimension to this traditional tomato-based chili with a smoky heat. The crock pot does the work for you while you enjoy the amazing smells all day!

Ingredients

  • 1 pound Ground Beef
  • 1 pound Round Steak, Cut Into Bite Size Cubes
  • Salt To Taste
  • 2 cans (15 Oz. Size) Tomato Sauce
  • 1 can (10 Oz. Size) Diced Tomatoes With Green Chilies
  • 1 can (15 Oz. Size) Diced Tomatoes, Undrained
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 can (15 Oz. Size) Kidney Beans (15 Oz), Undrained
  • 1 whole Onion, finely chopped
  • 4 cloves Garlic, Minced
  • 1 whole Green Pepper, Chopped
  • 1 teaspoon Smoked Chipotle Tabasco Sauce
  • 2 teaspoons Chili Powder
  • 1 teaspoon Cumin
  • ½ teaspoons Paprika
  • ½ teaspoons Cayenne Pepper
  • 1 teaspoon Oregano
  • Shredded Cheese And Sour Cream, To Serve

Preparation

1. Heat a skillet over medium heat and add ground beef. Sprinkle lightly with salt. Cook until no pink remains. Drain excess fat and put ground beef into crockpot. Add round steak cubes to skillet and brown on all sides, leaving some pink in the middle. Sprinkle lightly with salt. Drain excess fat and add steak to crock pot.
2. Place cans of tomato sauce, tomatoes, black beans, and kidney beans in crockpot along with the onion, garlic, green pepper and Tabasco sauce.
3. In a small bowl, stir together chili powder, cumin, paprika, cayenne pepper, and oregano. Add mixture to the crock pot and mix everything together well.
4. Cook in the crockpot on low heat for 6-8 hours or until onion and green pepper are soft. Serve with shredded cheese and sour cream.

This was yummy! I used ground elk and elk back strap. I have to add my teenage son’s comment though. “Thanks for dinner mom, it was PRETTY good.” I count that as a win, since I usually don’t get 8 words from him all day!
