Preheat oven to 180 C.
Put the chicken into a lightly greased oven-safe baking dish. Arrange lemon, tomato and thyme over the chicken breasts.
Place in the oven at 180 degrees, cook for 20 minutes or until the chicken is no longer pink.
Sliced one breast and eat it for dinner, and keep the second one for lunch.
Storage: Tip when you store the sliced cooked chicken—place some of the roasted lemon with it. This keeps it moist.
