Description

Very easy and tasty, and much healthier than traditional fettuccine alfredo. The cottage cheese makes a very creamy, guilt-free sauce.

Ingredients

  • 8 ounces, weight Whole Wheat Fettuccine Or Other Pasta
  • 1 cup Fat Free Cottage Cheese
  • ⅓ cups Grated Parmesan Cheese
  • ¼ cups Fat Free Skim Milk
  • 2 pinches Salt And Pepper
  • Garlic Powder, Oregano, Onion Powder Or Other Spices To Taste
  • 1 cup Cooked Vegetables (I Use A Frozen Blend Of Broccoli, Cauliflower, And Carrots)

Preparation

Cook fettuccine according to package directions. Drain and return to pot and set aside.

While pasta is cooking, add cottage cheese, parmesan, milk, salt and pepper, and spices of your choosing to a blender and blend until smooth.

Pour the sauce into the pot with the pasta and stir in the cooked vegetables. Cook over medium heat, stirring frequently, for 2 to 3 minutes, or until thoroughly mixed and heated. Season with additional salt and pepper, if needed.

Note: Feel free to add in some chopped, cooked chicken along with the vegetables.

I just made this for dinner. Wow! And my beef guys didn’t even complain that there was no meat (no time to thaw and cook chicken). I didn’t tell them it was healthy *gasp*! This WILL be made again!

TERRIFIC!! I don’t like cottage cheese, so I was skeptical, but this recipe is wonderful!! Everyone enjoyed it, even my picky eaters! Thanks for sharing.

This was very good as a healthier alfredo! I grated fresh garlic instead of using garlic powder.
