Description

A crockpot baked potato soup recipe with a whole bunch of cauliflower mixed in.

Ingredients

  • FOR THE SOUP:
  • 2 whole Russet Potatoes, Peeled And Chopped
  • 2 whole Red Potatoes, Peeled And Chopped
  • 1 head Cauliflower, Stem Removed And Roughly Separated
  • 3 cloves Garlic, Chopped
  • 5  Green Onions, Chopped
  • 1  Shallot Clove, Chopped
  • 1  Jalapeno, Chopped
  • 3 stalks Celery, Chopped
  • 4 teaspoons Knorr Chicken Poultry Seasoning
  • 32 ounces, fluid Chicken Stock
  • 8 ounces, fluid Water
  • ¾ cups Fat-free Half-and-half
  • 3 teaspoons Salt
  • 2 teaspoons Pepper
  • FOR THE GARNISHES:
  • 8 strips Cooked Bacon, Crumbled
  • ½ cups Green Onions, Chopped
  • 1 cup Cheddar Cheese, Shredded

Preparation

Put all the soup ingredients in a crockpot. Let cook on low for about 8 hours. When finished, use an immersion blender to blend until completely smooth. If you do not have an immersion blender, transfer soup to a regular blender to blend. Adjust seasonings to taste.

Serve with crumbled bacon, green onions, and cheese.
