Description

Another recipe handed down from my grandmother. When I make a pan of this it is gone in a flash!

Ingredients

  • 2 pounds Frozen Hashbrowns
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 8 ounces, weight Sour Cream
  • ½ cups Chopped Onion (i Love Green Onion)
  • 2 cups Grated Sharp Cheddar Cheese
  • 1 stick Butter
  • 1 whole Sleeve Of Ritz Crackers, Crumbled

Preparation

1) Spread frozen hash browns in the bottom of a 9 X 13 pan.

2) Mix soup, sour cream and onions. Spread this over the potatoes.

3) Sprinkle cheese on top of soup mixture.

4) Melt butter and mix with the crackers. Sprinkle this over the top of the cheese.

5) Bake at 350 degrees (F) for one hour.

Cooks notes –

This was given to me verbatim from Granny – however I have found depending on pan size sometimes I only need 1 pound (1 bag) of hash browns. Also, I mostly use the “shredded” variety of hash browns – I do not know if the same could apply to the “cubed” (also known as Southern style) variety. Either way it is VERY tasty.

I have used both types of hash browns and like them both. (The shredded cooks better/more quickly though.) I also mix the ingredients altogehter (except for the cracker crumbs), instead of spreading on top, and it’s very good that way!

I have made this casserole before but with cornflakes on top – also very yummy!

We had eaten something like this at Easter, and, since my husband loves potatoes (and I love comfort food) I wanted to find the recipe. This one is the most like what we had, and when I made it, it turned out delicious! Thanks for the yumminess!
