Description

I call them Happy Linguine—they’re happy because of the wine! Please note that although I don’t think you should, you can easily “hide” vegetables in the sauce (puree them!). I do not advocate this; EAT your vegetables!

Ingredients

  • 1-½ pound Turkey Sausage
  • 5 cloves Garlic
  • 1-⅓ cup Dry White Wine, Divided
  • 1 Tablespoon Ground Fennel
  • 1 teaspoon Fresh Ground Pepper
  • 1 teaspoon Crushed Pepper
  • 2 Tablespoons Olive Oil
  • 1 whole Carrot, Finely Chopped
  • 1 whole Onion, Finely Diced
  • 1 whole Celery Finely Chopped
  • 1 can (14 Oz. Can) Crushed Tomatoes
  • 1 can (14 Oz. Can) Small Diced Tomatoes
  • Salt And Pepper
  • 1 pound Linguine, Cooked
  • 3 dashes Fresh Parmesan Cheese

Preparation

First you must “marinate” your sausage. Remove the casings from the sausages and put the sausage filling in a bowl. Add your garlic, 1/3 cup of wine, fennel, black pepper and crushed red pepper. Cover and refrigerate at least 4-5 hours (overnight is fine).

In a large skillet, heat olive oil. Add sausage mixture and cook over high heat until lightly brown (no pink showing). Add your carrots, onions and celery, stirring frequently. Let this cook for 4-5 minutes. Add remaining 1 cup of wine and let this reduce by half. Add crushed tomatoes and diced tomatoes (with their juices) and salt and pepper. Let this cook down for at least 30 minutes.

Serve over your cooked linguine (you want to keep 1/2 cup of your cooking liquid in the event your sauce gets too thick).

Top with Parmesan cheese and a serve with a side of fresh bread.

This looks amazing and I plan on making it. Your recipe calls for one celery…is that just one rib or one entire bunch? I am guessing a rib but just want to be sure. Yummy recipe can’t wait to try.

I have made this 3 times sice Isabelle at Home gave me her recipe! My family loves it and it is so easy. I like to start it on a Sunday night so that on a busy Monday I know I already have dinner 3/4 of the way done! Yum!
