This month with back-to-school in mind Tammie and I decided to do convenient breakfast and lunch box foods as our recipe theme. The following wrap is a tasty ham roll-up that you could also slice into rounds and serve to grown-up friends too!
In a bowl, mix together the cream cheese and pineapple tidbits with a fork, breaking up the pineapple as much as possible.
Spread half of the mixture on a tortilla. Cover with ham slices. (4 should be enough per tortilla.) Roll up the tortilla and slice off the end ½” or so of uneven rolled tortilla. Roll the tortilla in a sheet of cling wrap.
Repeat with the other tortilla and remaining fillings.
Feel free to customize the toppings to your taste. I like my wrap with avocado, tomato and lettuce while my husband likes the chicken on a bun as a club sandwich. The real key to this recipe is the marinade.
