Description

Easy slow cooker recipe that will warm you up on a cold winter day or cure your hankering for meat and potatoes any time of the year.

Ingredients

  • 3 pounds Baking Potatoes, Peeled And Chunked
  • 2 pounds Ham, Chunked Or Diced
  • 1 whole Onion, Diced
  • 10-¾ ounces, fluid Condensed Cream Of Mushroom Soup
  • 8 ounces, weight Mushrooms Stems And Pieces, Drained
  • 5 ounces, fluid Evaporated Milk
  • Sliced Or Shredded Cheese, For Topping

Preparation

This dish may be cooked in either a crock pot or in a 9X13″ baking dish. Spray baking dish or crock pot with non-stick cooking spray before adding ingredients.

In crock pot, add all ingredients except cheese, stir and cook for 8 hours on the “High” setting. Once done, remove lid. Place cheese on top of casserole. Place lid back on crock pot and warm until cheese is melted.

If using a casserole dish, combine all ingredients except for cheese. Bake at 350 degrees for 1 hour and 15 minutes or until potatoes are tender. Top casserole with cheese and bake an additional 10 minutes.

This is my family’s favorite meal with leftover ham. Delicious. The fresh breadcrumbs add a nice texture and flavor.

I made this for my family the other night and no one complained. I’ve made a recipe similar before but that one was too salty for my taste. I think this one wins because the salt of the ham seasons the potatoes and the evaporated milk keeps the consistency not too thick. Instead of adding the cheese and baking additionally, we just sprinkled the cheese on top of our servings on our plate. (Also, I didn’t add the can of mushrooms because my family would gag and fall off their chairs.)
I could see this recipe being a perfect busy night meal when your kid brings home extra two friends and you still have to rush out the door.
