Description

Quick and easy, creamy, and super yummy!

Ingredients

  • 1 Tablespoon Olive Oil, For Frying
  • 1 whole Large Shallot, Chopped
  • 6-⅜ ounces, weight Pasta
  • 4-½ ounces, weight Mushrooms, Sliced
  • 1 whole Small Courgette/Zhcchini, Sliced (optional)
  • 4 ounces, weight Mascarpone
  • 3 slices Good Quality Ham (I Used Gammon Ham), Cut Into Bite-sized Pieces
  • Black Pepper, To Season
  • 1 Tablespoon Parmesan, Plus Extra To Serve

Preparation

In a wok or large pan, heat the olive oil over a medium-high heat and fry the shallots for 3-4 minutes until soft.

You can put the pasta on to cook at this point. Cook pasta according to package instructions. Then drain it and set aside.

Add the mushrooms and courgette into the pan with the shallots and fry until the mushrooms have softened. Add the mascarpone and the ham so the mascarpone melts and the ham heats through. Season with black pepper and add the parmesan. Stir well. Toss with the cooked pasta and serve with parmesan.
