Description

Quick, easy, and delicious! This is one meal that all my kids will eat…and ask for seconds!

Ingredients

  • 2-½ cups Uncooked Elbow Noodles
  • 3 Tablespoons Butter, Plus Extra For Dotting The Top Of The Casserole, If Desired
  • 2 Tablespoons Flour
  • 1 cup Milk
  • 1 cup Shredded Cheddar Cheese
  • ½ teaspoons Salt
  • 2 cups Diced Ham
  • 1 cup Frozen Corn Or Peas
  • ¼ cups Bread Crumbs (or Crushed Crackers)
  • ½ teaspoons Parsley

Preparation

Cook noodles according to package directions. Drain.

Melt butter in a large skillet over medium heat. Add flour and milk. Whisk together and bring to a boil. Cook for 2 minutes or until thickened. Remove from heat. Stir in cheese and salt. Add ham, the cooked noodles and corn/peas. You can add a little extra milk if you think it is too dry.

Transfer to a greased baking dish (I use my cast iron skillet then I can just pop the whole thing in the oven without having to transfer it to a baking dish.) Top with bread crumbs and parsley. Dot with additional butter. Bake at 350F for 30 minutes.

Very good and easy! We like our mac and cheese a little sloppier than some, so I made an extra batch of cheese sauce for that amount of noodles. The original sauce is really tasty as is, so I knew it would be delicious. When I made the next batch of sauce, I added some smoked paprika to it as well as some ground mustard and garlic salt just for fun. Mmmmm!
