These are a nice alternative to the standard meatball. I like to eat mine with a dab of plain flavored yogurt, but they’d taste good in tomato sauce as well. This recipe is brought to you by Adventures in Lunch!
Preheat oven to 350F.
Mix everything together. Roll into 2-inch meatballs and place 2 inches apart on a baking sheet. Or, if you have a mini ice cream scoop and a mini muffin pan, use the scoop to get the perfect size meatball and bake them in the mini muffin pan to keep the perfect shape.
This should yield about six perfect meatballs. Bake 25-30 minutes. Cool and serve with plain yogurt or your favorite tomato sauce.
