Description

Love avocados? Love pasta? This is the recipe for you!

Ingredients

  • ½ pounds Whole Wheat Pasta
  • 2 whole Medium Ripe Avocados, Pitted And Peeled
  • ⅓ cups Olive Oil
  • 1 whole Lime, Juiced
  • 1 whole Jalapeno, Stem Removed And Sliced
  • 2 cloves Garlic, Minced
  • ⅓ cups Onion, Chopped
  • 2 Tablespoons Chopped Fresh Cilantro
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Ground Black Pepper
  • 1 teaspoon Cholula Hot Sauce, Plus More For Topping
  • 1 cup Cherry Tomatoes, Cut In Half

Preparation

Cook pasta according to package directions. When done, drain and set aside in a serving bowl.

In a blender or food processor, combine avocado, olive oil, lime juice, jalapeno, garlic, onion, cilantro, salt, pepper and hot sauce. Pulse until well combined and you have a nice sauce.

Combine cooked pasta with avocado mixture and tomatoes.

Garnish with more hot sauce if desired and enjoy!

Um, this is really delicious. It’s a great combination of flavors which ended up being light, subtle, and not overpowering. We added chicken to make it a bit more hearty, but this is great as a standalone too. We’ll definitely make this again, and also make the sauce for other things. Thanks for sharing!
