I whipped this up one night we were having a double date. I wanted something fancy yet easy. Originally, I used a pan on the stove but the second time, I tried grilling it and loved it! My love requests these whenever we have guests now!
Mix mushrooms, goat cheese, roasted red pepper, basil, garlic and lemon juice in a food processor. Slice chicken almost in half, pound out slightly. Put about 2 tablespoons of the cheese mixture inside the chicken and season with salt and pepper. Roll up and secure with a toothpick. Drizzle with olive oil and grill until cooked through, usually about 25 minutes depending on the size of the chicken.
