Description

Cajun-inspired, spicy delicious shrimp po’ boys

Ingredients

  • ½ cups Mayonnaise
  • 1-½ Tablespoon Cajun Seasoning, Divided
  • ½ teaspoons Cayenne Pepper
  • 1 cup Chopped Tomato
  • 1 cup Chopped Onion
  • 2 cups Romain Lettuce
  • 1 whole French Baguette, Cut Into Quarters And Sliced In Half
  • 12 ounces, weight Shrimp, Deveined And Peeled
  • ¼ cups Olive Oil

Preparation

Prepare the mayonnaise by combining the mayonnaise, 1 tablespoon of the Cajun seasoning and the cayenne pepper. Mix well and refrigerate until sandwiches are ready to assemble.

While the grill is heating up (medium heat), chop the tomato and onion and prepare the lettuce and baguette. We grilled the bread so we buttered each piece. The butter could be skipped if you choose not to grill the bread.

Skewer the shrimp and set aside on a plate. Mix the remaining Cajun seasoning and olive oil together in a small bowl. Generously brush it onto both sides of the shrimp.

Grill the shrimp for 2 minutes on each side until cooked through. Grill the bread at the same time, if desired.

Assemble sandwiches, placing the lettuce, onions, tomatoes, mayo and shrimp on the bread. And enjoy!
