Description

Center cut salmon fillets topped with minty cucumber raita.

Ingredients

  • 6 whole (6 Oz. Size) Center-cut Salmon Fillets
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Freshly Ground Black Pepper
  • 1 cup Plain Greek Yogurt
  • 1 whole Hothouse Cucumber, Seeded, Grated, And Squeezed Dry
  • 2 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Chopped Mint Leaves
  • ¼ teaspoons Ground Cumin
  • 1 pinch Cayenne Pepper

Preparation

Place a grill pan over medium-high heat. Drizzle the salmon with the olive oil and season with salt and pepper. Cook for 6 to 8 minutes per side, until the fish is cooked through and flakes easily.

Meanwhile, stir together the yogurt, cucumber, lemon juice, mint, cumin, and cayenne pepper in a small bowl to combine. Season with salt, to taste. Spoon the sauce over the salmon fillets and serve.
