Great summer grilled chicken dish with an Italian theme.
Mix the first 5 ingredients in a small bowl to make your herb rub.
Pound chicken breasts between plastic wrap to about 1/4 to 1/2 inch thickness. Rub each breast with olive oil and rub the dried herb mixture on both sides of the breasts pressing lighlty.
Heat grill to medium high heat. Grill chicken 4-5 minutes on each side until done.
Remove from grill and plate. Cut lemon in half and squeeze lemon over the top of breasts, adding a drizzle of olive oil if you like.
Serve with a light tomato pasta dish.
