Description

This shrimp is fresh and delicious! Elegant enough for guests and quick enough for a weeknight dinner.

Ingredients

  • 1 pound Raw Shrimp, Peeled And Deveined
  • FOR THE MARINADE:
  • ¼ cups Fresh Or Bottled Lime Juice
  • 2 Tablespoons Honey
  • 2 Tablespoons Canola Oil
  • 2 Tablespoons Chili Powder (mild)
  • 1 whole Clove Fresh Garlic, Crushed
  • 1 cup Fresh Cilantro, Chopped

Preparation

1) Combine all of the marinade ingredients, whisk well to combine. Reserve a couple of tablespoons of the marinade to spoon over the cooked shrimp. Use the rest of the marinade for the raw shrimp. Put it in a bowl with the shrimp, mix to combine, and marinate shrimp for 20 minutes before grilling.
2) Skewer the shrimp and cook over medium high heat for 4-5 minutes, flipping half way through. Shrimp will be bright pink when they’re done. Spoon the reserved marinade over the shrimp when ready to serve. Makes 4 servings

**If you’d like a more spicy shrimp, add a couple of pinches (or more) of cayenne to the marinade.
***If you’re using bamboo skewers, soak them in water for 20 minutes before using to prevent burning on the grill.

Just made this for dinner w/a few small adjustments (aka not enough lime juice). It was great, and easy to make.
