Description

Your classic tomato, basil and fresh mozzarella dish, but with grilled chicken for a yummy, light and filling dinner. Serve it with pasta, a side salad, whatever floats your boat!

Ingredients

  • 2 whole Chicken Breasts, Cleaned And Seasoned
  • ½ cups Balsamic Vinegar
  • 1 Tablespoon Butter
  • 4 slices Fresh Mozzarella
  • 4 slices Tomato
  • 4 leaves Basil, Chiffonaded

Preparation

While your grill master is hard at work grilling the chicken, heat a shallow pan on medium heat for a couple of minutes. Add your 1/2 cup of balsamic vinegar and let it reduce to the consistency of maple syrup. Remove from heat and whisk in butter.*

Slice your fresh mozzarella, tomato and chiffonade your basil.

Now, take your grilled chicken and top with the following ingredients, in the following order:

2 slices of mozzarella, 2 slices of tomato, some basil and drizzle your balsamic vinegar reduction over the top.

Serve with your favorite side dish and enjoy! Easy, beautiful and tasty.

*You may need to reheat the reduction for a couple of seconds for easier drizzling.

Hi Sagey, so sorry I have taken a million years to respond to you!!

I usually salt and pepper the chicken, but it’s not necessary to the recipe. :) The mozzarella has a nice saltiness and the balsamic reduction adds great flavor.
