Description

Serve as a cold sandwich or panini. Delicious!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts, Pounded To Even Out Thickness
  • Sliced Sourdough Or Other Crusty Bread
  • Apricot Preserves
  • Mayonnaise
  • Dijon Mustard
  • Cayenne Pepper (Optional)
  • Baby Spinach
  • Red Onion, Sliced Thinly

Preparation

Season chicken breasts with salt and pepper. Drizzle with olive oil and grill until cooked all the way through. Wrap in plastic wrap and efrigerate until needed.

Combine equal parts apricot preserves, Dijon mustard, and mayonnaise. Add cayenne to taste. Refrigerate until needed.

To assemble, spread apricot sauce on two slices of bread. Add chicken breast, baby spinach, and red onion slices.

Serve cold or drizzle with olive oil and brown on a panini grill.

Serve with kettle-cooked potato chips.

I have made this whole recipe almost as directed. I don’t have a grill or grill pan (I know, tragedy) so I fried them lightly and made paninis. I just wanted to comment and say that the SAUCE is incredible and I kind of just like to make it as a dip or salad dressing. So easy and unique too.

I made this for dinner last night and I thought it was fantastic! Such an interesting and gorgeous sandwich! In my opinion, browning it on a panini press (I actually use my George Foreman grill) is an absolute MUST!

This sandwich was very good, and pretty easy to put together. I used mesclun instead of spinach, and I think it turned out fine. The dijon I used was also whole grain, so the sauce had a lot of texture.

The only thing I didn’t have was panini press. I think the sandwich would’ve tasted better had I owned a press. I would make this again!
