Description

This is a delicious sandwich inspired by one of our favorite local diners!

Ingredients

  • 1 whole Onion
  • 6 strips Bacon
  • 2 whole Boneless Chicken Breasts
  • 4 slices Provolone Cheese (mild)
  • 4 whole Kaiser Rolls
  • 4 Tablespoons Honey Dijon Mustard
  • 4 leaves Lettuce
  • 4 slices Tomato
  • ¾ cups Banana Peppers Sliced

Preparation

Slice onion and grill along with the bacon until onions are soft and slightly brown and bacon is crispy.

While those are cooking, slice your chicken breasts in half so each piece is thinner. If your chicken breasts are large, you can actually get away with buying 1 whole chicken breast for this entire recipe. When you slice the breasts in two, it gives you double the amount. I hope I’m making sense.

Grill chicken on a Panini press if you have one. We grilled the chicken about 4-5 minutes. Next, we placed the cheese on each piece of chicken and closed the lid slightly to trap heat and melt the cheese.

Slice your buns and add the mustard, lettuce, tomato and some banana peppers. (If you don’t like banana peppers, just add some of the juice for flavor.) Place grilled chicken on the bun and top with your cooked bacon and onions. Slice and enjoy!
