Turn your grill on high for five minutes to preheat it. Then clean the grates with a steel brush. Turn grill to low. Brush grill grates with olive oil.
Roll out dough if not done already, and oil one side of the dough generously. Throw the dough onto the grill, oil side down.
Oil the other side of the dough. Check on the bottom of the dough and turn if needed so one side doesn’t burn. Shut lid if needed to warm up.
Once the under side is golden brown, turn pizza over using a couple spatulas (turn carefully), and while that side is browning, add pizza ingredients to top, starting with BBQ sauce, then cheese, chicken and onion. Add extra BBQ sauce for garnish on the top.
Close the lid and let cheese melt, checking every couple minutes to ensure no burning on the bottom of the dough. Turn if needed. Take the pizzas off the grill using spatulas and place them onto a cookie sheet. Let them cool a couple minutes before cutting and eating.
Enjoy warm.
