The first time I made this recipe was for our neighborhood block party. I wanted something easy (so that I could enjoy my friends) that was also yummy (and maybe a little impressive). I was definitely a hero that night! Not only did it taste GREAT but it looked good too. Everybody was telling me what a great idea it was and wanted the recipe. This dish goes perfectly with Bush’s Smokehouse Tradition Grillin Beans.
Preheat grill to medium-high heat.
In a small bowl combine ½ cup of BBQ sauce and the cream cheese.
In another bowl combine the cooked and shredded chicken and the remaining BBQ sauce.
Using a bread knife cut the top quarter off of the loaf of bread and scoop out the insides. Spread half of the cream cheese mixture on the bottom of the inside of the bread.
Place half of the slices of provolone cheese on top of the cream cheese mixture, followed by half of the onion, half of the red bell peppers, half of the chicken mixture and 4 pieces of cooked bacon. Sprinkle the mozzarella cheese on top. Repeat the layers with remaining ingredients in the following order: onion, bell pepper, chicken and bacon; top with remaining provolone cheese. Spread the remaining cream cheese mixture on the inside of the bread top and set the top into place on top of the loaf. Wrap the loaf twice in greased aluminum foil, making sure all the edges of the foil are well sealed.
Place on the grill and weigh it down with a brick or other heavy object. Grill for 20 minutes turning over half way through.
Then remove from heat, open foil and cut into wedges and serve hot with Bush’s Smokehouse Tradition Grillin’ Beans.
