Grill Pork Chops Like a Boss

Description

Do you want to be a backyard superhero? Well, learn how to grill pork chops like a boss! Grilling is seriously fun and making a great steak is one way to show off your grilling skills.

Ingredients

  • 2 whole (1 1/2 Inch Thick) Loin Pork Chops
  • 1 quart Water
  • ¼ cups Salt
  • 2 Tablespoons Olive Oil
  • Salt And Pepper, to taste
  • FOR THE BBQ SAUCE:
  • 1 cup Ketchup
  • ⅓ cups Molasses
  • ⅓ cups Brown Sugar
  • 1 teaspoon Onion Powder
  • 1 Tablespoon Garlic Powder
  • ¼ cups White Vinegar
  • 2 dashes Worcestershire Sauce

Preparation

30 minutes hours to 4 hours before, mix water and salt and water in a shallow dish. Add chops. Brine for 30 minutes, up to 3 hours.

Preheat one side of grill to 500ºF and have a second zone that is indirect heat.

While grill is preheating, remove chops from brine. Pat dry. Rub chops with olive oil and sprinkle with salt and pepper.

Once grill is heated, add chops to the hot zone and sear each side for 2 1/2 minutes. Move to indirect heat, coat one side with BBQ sauce (see below), and then place sauce-side down. Grill for 10 minutes.

Generously brush some BBQ sauce on top side and flip. Allow to cook for 10 minutes. During this step, start checking the meat temperature often. At 135ºF, remove chops from heat. Repeat brushing with sauce and flipping if necessary. It should really be done.

Remove and allow to rest for 10 minutes. Serve!

For the BBQ sauce:
Mix all sauce ingredients into a medium saucepan. Heat over medium-low for about 1 hour or until everything is well incorporated.
