Soul satisfying greens with bacon on top of rich creamy polenta.
Add sliced bacon to a large frying pan. Cook until browned and crisp. Remove bacon from the pan and drain on paper towels. Reserve about 1 1/2 tablespoons bacon drippings. Add chopped onion and saute over medium heat for 3 minutes or until translucent. Add greens (stems and all) to the onion and toss to combine. Once the greens are wilted, add the bacon back into the pan and the vinegar. Stir to combine and serve over the polenta.
Basic Creamy Polenta:
In a separate sauce pan bring water or stock up to a boil. Add your salt and slowly stir in the polenta. Lower heat and continue to stir and cook with your mixture bubbling slowly. When the polenta is nice and thick (about 6-10 minutes), stir in the butter and remove from heat. Stir in the cheese and taste if it needs more salt and pepper.

OOPS. I think that I added Tablespoon to salt when it should be teaspoon. That is too much salt. Sorry, I’ll fix that. I’m glad you like it Natalie.

This was fantastic. I think next time I will cut the salt in half. It was a little to much for me and then everyone else can add salt to theirs.

Wow, girl… this was really good. I used Pecorino, which was a little strong, but heavens…. I wish I had doubled the recipe. 6 servings? Um… it fed me, my husband, and my baby and we could have eaten more! Such a delicious and fast go-to recipe during the week. Thanks!
