Description

Tender steak, savory broth, crisp peppers and juicy tomatoes. This was my mom’s recipe and she had it on our regular dinner rotation. A great family recipe for over 40 years.

Ingredients

  • 1 pound Round Steak, Sliced Thin
  • ½ cups Soy Sauce, Divided
  • 1 teaspoon Sugar
  • 3 Tablespoons Olive Oil
  • 1 clove Garlic, Minced
  • 1 Tablespoon Fresh Ginger, Minced
  • 2 whole Green Bell Peppers, Large, Cleaned And Cubed
  • ¾ cups (scant) Water, Just Enough To Reach A Total Of 1 Cup Of Cornstarch Slurry
  • 2 Tablespoons Cornstarch
  • 2 whole Tomatoes, Large, Cubed

Preparation

Pour 1/4 cup of soy sauce and the sugar over sliced steak. Marinate for at least 30 minutes.

Heat olive oil in a large skillet over medium to medium-high heat. Add minced garlic and ginger. Saute 1 minute. Add sliced steak and saute for 8 to 10 minutes. Add peppers, reduce heat and cook on medium low for 10 to 15 minutes.

Blend 2 tablespoons cornstarch and the remaining 1/4 cup soy sauce in a 1- cup measuring cup. Add enough water to measure 1 cup. Add this slurry mixture to the meat. Then add tomatoes and stir gently. Cook 2 minutes until the sauce thickens a bit. Serve over rice!
