Description

These are mini meat pies inspired by classic New Zealand mince pie. I couldn’t resist throwing some green curry in the mix. I used a muffin tray for these but a nice round pie dish is also good.

Ingredients

  • 1 Tablespoon Oil
  • 3-⅝ ounces, weight Green Curry Paste
  • 1 pound, 1-⅔ ounces, weight Turkey Meat, Ground
  • 1 whole Red Onion, Chopped
  • 5 cloves Garlic, Chopped
  • 1 piece Fresh Ginger, About 5 Cm In Length, Finely Chopped
  • 3 sticks Lemongrass, Chopped
  • ½ pounds, ⅞ ounces, weight Frozen Peas
  • 1 pinch Salt To Taste
  • 1 cup, 2-⅔ teaspoons, ⅞ pinches Coconut Milk
  • 1 cup, 2-⅔ teaspoons, ⅞ pinches Water
  • 1-½ ounces, weight Butter (for The Muffin Tray)
  • 1 pinch Flour
  • 2 bags Puff Pastry, About 400 Grams Each
  • 1 bunch Chives, Chopped
  • 1 bunch Basil (fresh Or Dry)
  • 1 whole Egg, Beaten

Preparation

Put a wok over medium fire and wait until it’s hot, then add the oil. Immediately add the green curry paste and stir for about a minute.

Add the ground turkey and stir until you get rid of any big lumps and the meat is mostly brown. Add the onion, garlic, ginger, lemongrass, peas and salt and give it all a good stir. Add the coconut milk and the water and let it simmer for about 20 minutes.

Meanwhile, butter a muffin tray (or a pie dish). Sprinkle a bit of flour on a clean surface and roll out the puff pastry. Cut out circles for the bottom of the muffins and cut slightly smaller circles for the tops. Put the bigger circles into the bottom of the muffin cups and press with your fingers so the dough takes the shape of each individual muffin cup.

Back to the filling, add the chopped chives and the basil (fresh is great but dry works too). Check to see if the peas are completely cooked through. If ready, turn off the fire and let it cool for a few minutes.

Scoop the filling into each muffin cup until almost full (about 3 tablespoons). Place the smaller dough tops on the muffins and pinch together the lid and the sides of the muffins. Glaze with the beaten egg, cut a small “x” on the top of the muffins and place into hot oven. Bake at about 210 C for 15 minutes or until golden.
