Description

I remember this dish from ALL of our family reunions. The grandmas always make it, and it is soo good! Fresh corn and cream cheese are an awesome pair!

Ingredients

  • 4 cups Fresh Corn Removed From The Cob
  • 1 package (8 Oz) Full Fat Cream Cheese
  • 3 Tablespoons Butter, Any Kind You Prefer
  • 1 can Diced, Fire Roasted Green Chilies
  • 1 pinch Salt And Pepper, to taste

Preparation

Begin by removing the fresh corn from the cob. I do this by setting a large mixing bowl on the cabinet and placing the next largest mixing bowl inside the larger one, upside down.

Place the corn cob on top of the upside down bowl for stability and use a large knife to slide down the cob removing the kernels.

While you are cutting, the corn is falling down into the larger mixing bowl. Just so you know, I ain’t hoity toity–I’ll reach in that freezer and pull out the frozen stuff just as fast! and it’s ridiculously good still!

Place your four cups of corn into a medium casserole dish.

In a separate mixing bowl, add your cream cheese, butter and green chilies. Place in microwave for 30 seconds to a minute. Just enough time to soften the cheese and melt the butter. Mix very well.

Pour over top of the corn and add salt and pepper. Mix all very well. Bake until bubbly for about 20 minutes at 350. SLURP! So good!

This was very good! Worked very well reheated the next day too.. (assuming you can control yourself and not eat it all in one sitting!
