Description

A delicious alternative to chicken salad sandwiches. This recipe also freezes well – I usually freeze about half of it and pull it out for a busy weeknight.

Ingredients

  • 1 package Cream Cheese (8 Oz.)
  • 2 cups Cooked Chicken (I Use Two Bone-in And Skin On Chicken Breasts)
  • 1-½ cup Shredded Cheddar Cheese
  • 1 can (4 Oz. Size) Chopped Green Chilies, Drained
  • 3 Tablespoons Green Onions, Chopped
  • 1 pinch Seasoning Salt, Such As Lawry's (more Or Less To Taste)
  • 1 teaspoon Ground Cumin (more To Taste)
  • ½ teaspoons Crushed Red Pepper Flakes (more To Taste)
  • ¼ teaspoons Chili Powder
  • 2 Tablespoons Fresh Cilantro, Chopped

Preparation

Preheat oven to 375 degrees F.

Beat the cream cheese until fluffy. Stir in the cooked and shredded chicken, cheddar cheese, green chilies, and onions. Add in seasonings and add more/less to taste.

If you would like to freeze half of mixture, do so now.

Put mixture in oven safe baking dish and bake for 5-7 minutes or until cheese has melted and top is light golden brown. Sprinkle with fresh cilantro. Delicious on deli rolls or sandwich bread.

This was delish, but instead of eating it as a sandwich we ate it with fritos as a dip and it was a hit!
