Description

Greek/Italian fusion! So many good flavors rolled into one.

Ingredients

  • ½ pounds Mushrooms
  • 2 whole Garlic Cloves
  • 1 whole Shallot
  • 2 whole Tomatoes
  • 1 whole Sheet Of Puff Pastry, Thawed
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Dried Basil
  • ½ Tablespoons Dried Oregano
  • 2 cartons Fresh Spinach (or I Used Arugula)
  • ½ whole Lemon, Juiced
  • 1 cup Shredded Mozzarella Cheese
  • ½ cups Crumbled Feta
  • ½ cups Fine Breadcrumbs
  • Fresh Basil, For Garnish (optional)

Preparation

Preheat oven to 375F.

Slice the mushrooms and mince the shallot and garlic. Slice tomatoes. Set these aside.

Unfold the sheet of puff pastry and place it on a greased baking sheet. Melt butter and brush it onto the pastry.

Heat any remaining melted butter and olive oil in a skillet over medium heat. Add mushrooms, shallot and garlic. Cook until softened.
Add basil, oregano, spinach and lemon juice to pan. Stir and cook until spinach is wilted. Remove from heat.

Spread mushroom mixture onto puff pastry. Top with mozzarella and feta cheese.

Dip the tomatoes in a bowl of bread crumbs to cover them on both sides. Place tomatoes on top of cheese.

Bake the pizza for 25-30 minutes. Remove from oven, then top with sliced fresh basil if you have some on hand.
