Description

God-parents to our first-born gave us this wonderful family recipe. Try it, you will be glad you did!

Ingredients

  • 3 pounds Boneless Leg Of Lamb Or Sirloin Steak
  • 1 cup Olive Oil
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Salt
  • 1 teaspoon Freshly Ground Pepper
  • 1 teaspoon Oregano
  • 3 leaves Bay Leaves
  • 3 cloves Garlic, Chopped
  • 2 Tablespoons Chopped Parsley
  • 1 whole Green Pepper, Quartered
  • 1 whole Medium Onion, Quartered
  • 6 ounces, weight Whole Mushrooms (or As Many As You Want)
  • 1 pint Cherry Tomatoes (or More If You Like)

Preparation

Note: you’ll need 6 12-inch Skewers, Metal Or Bamboo for this recipe.

1. Cut lamb or sirloin into 1 1/2 to 2-inch cube pieces, making about 18 pieces. You can easily increase the amount of meat in this recipe. I usually make up several ‘meat lover’ skewers with the meat alternating as every other piece!

2. Combine the olive oil, lemon juice, salt, pepper, oregano, bay leaves, chopped garlic, and parsley.

3. Pour over the meat and allow to stand overnight or all day in the refrigerator.

4. On the day of serving, lightly pan fry the green peppers and onions to soften them. Or you can broil them in olive oil for about 5 minutes. Cool. Using six 12-inch skewers, string on a piece of meat, mushroom, cherry tomato, green pepper, onion wedge, repeat and end with a piece of meat. Use 3 pieces of meat per skewer unless you desire the ‘meat lovers’ version! See #1 above.

5. Brush with the remaining marinade and place on broiler rack in oven or on the grill. Grill on all sides for approximately 15 to 20 minutes total cook time.

6. We like to serve this with a wild rice side dish and a big salad.
