Description

A Mediterranean twist on your favorite quesadilla, complete with tzatziki sauce for dipping!

Ingredients

  • FOR THE QUESADILLA:
  • Olive Oil
  • ½ cups Rotisserie Chicken, Chopped
  • 5 whole Artichoke Hearts, Chopped
  • 5 whole Kalamata Olives, Chopped
  • ½ cups Spinach, Chopped
  • ¼ whole Red Onion, Chopped
  • 2 Tablespoons Fresh Parsley, Chopped
  • ¼ cups Mediterranean Feta Cheese
  • ½ cups Mozzarella Cheese
  • 1 whole Large Tortilla
  • FOR THE TZATZIKI SAUCE:
  • 1 teaspoon Lemon Juice
  • 3 Tablespoons Greek Yogurt
  • 1 Tablespoon Mayonnaise
  • ¼ teaspoons Salt

Preparation

Heat oil in a large frying pan.

To assemble the quesadilla, layer all ingredients on one half of the tortilla and fold over.

For the tzatziki sauce, place all ingredients in a small bowl and combine.

Carefully place the quesadilla in the frying pan and cook until cheese is melted and tortilla begins to brown, about 3-4 minutes per side.

Serve with tzatziki sauce, and enjoy!
