Description

A sweet and savory grape galette with cheeses and orange in a unique whole wheat crust. It can function as an appetizer, main dish, or dessert!

Ingredients

  • 1 cup Whole Wheat Flour
  • ¼ teaspoons Salt
  • ½ cups Cooked Sweet Potato
  • ¼ cups Olive Oil
  • ½ Tablespoons Water
  • 1 whole Orange
  • 4 cups Seedless Black Grapes
  • ⅓ cups Crumbled Feta Cheese
  • ⅓ cups Shredded Mozzarella Cheese
  • ¼ teaspoons Orange Zest

Preparation

Preheat oven to 375ºF.

In a medium sized bowl combine the salt and flour; cut in the cooked sweet potato (you can bake it, or use canned). Mix in the olive oil. Add the water only if the pie dough is too dry.

Roll out the pie dough on a piece of parchment paper until it is about 12 inches in diameter. Place the crust and parchment paper on a baking sheet. Don’t worry if the dough is wider than the baking sheet.

Peel the orange and separate its segments.

In a large bowl combine all of the remaining ingredients except the orange segments. Pile the mixture in the middle of the dough and spread it out evenly, leaving a 1 1/2 inch border of dough all around. Place the orange segments on top of the grape mixture in a circular pattern. Fold the border of dough up towards the center onto the grapes (but leave some of the center exposed). Seal any creases or cracks, using water to ensure the dough sticks to itself.

Bake at 375ºF for 30 minutes or until crust is done. Enjoy warm.
