Description

Italian sausage, veggies and a creamy tomato sauce.

My dauther and I created this one evening. She chose the name and Babelfish translated it. “Enjoy Pasta!”

Ingredients

  • 3 packages (about 16 Oz. Package) Italian Sausage Links
  • 2 whole Zucchini, Halved And Thick Sliced
  • 2 whole Yellow Squash, Halved And Thick Sliced
  • 1 whole Bell Pepper, Sliced To Large Pieces
  • 1 whole Medium Onion, Chopped To Large Pieces
  • 1 can (14.5 Oz. Can) Fire Roasted Tomatoes
  • 1 can (small 6 Oz. Can) Tomato Paste
  • 6 cloves Roasted Garlic
  • ¼ cups Heavy Cream
  • 1 teaspoon Oregano
  • ½ teaspoons Basil
  • ½ teaspoons Ground Ginger

Preparation

In a large saucepan, brown the sausage and remove, leaving the grease in the pan. Add zucchini, squash, bell pepper and onion to the pan and sprinkle with oregano, basil and ginger. Cook until they start to become tender. Add fire-roasted tomatoes, tomato paste, cooked sausage and garlic to the pan. Stir gently, taking care to not squish the garlic. Allow the sauce to heat thoroughly without letting it boil, approximately 10 minutes. Cover with a lid and reduce heat to medium low or low. Again, don’t let it boil. Stir occasionally. When veggies are tender, stir in the heavy cream. Combine well and allow your sauce to warm up again.

Serve over mini bowtie pasta or similar pasta. Add some fresh Parmesan cheese and/or fresh basil.

Buttery garlic bread is a must.
