Description

A homemade roasted tomato sauce with store-bought gnocchi make this a super easy weeknight meal!

Ingredients

  • 3  Tomatoes, Diced
  • 4 Tablespoons Olive Oil, Divided
  • ¼ teaspoons Red Pepper Flakes
  • Salt And Pepper
  • 1 package (17.6 Oz Package) Gnocchi
  • 3 cloves Garlic, Minced
  • 8 ounces, fluid Tomato Sauce
  • 10  Basil Leaves, Julienne
  • 1 teaspoon Salt
  • Grated Parmesan Cheese, For Garnish
  • Optional: Extra Red Pepper Flakes

Preparation

1. Preheat oven to 350 F. Cover a rimmed baking sheet with foil for easy clean up.

2. Spread the tomatoes out on the baking sheet. Drizzle with half of the olive oil, sprinkle on the red pepper flakes and the salt and pepper. Toss well, then roast for 20 minutes. Remove pan from oven. Give tomatoes a stir, then put pan back in the oven for another 10 minutes (total baking time is 30 minutes).

3. Once the tomatoes are done, remove the pan from the oven and set aside. Start boiling a pot of salted water for the gnocchi. Add gnocchi into the water once it boils. It’ll be ready in 3-4 minutes, once the gnocchi start floating to the surface. Drain well and set aside.

4. In a large pan over medium-low heat, drizzle the remaining half of the olive oil. Once hot, add the garlic and saute until fragrant (1 minute). Add the tomato sauce, roasted tomatoes, basil, and 1/2 of the salt. Stir well and cook for 2 minutes.

5. Toss the cooked gnocchi in the roasted tomato sauce, adding more red pepper flakes if you like it spicy. Add remaining salt if needed.

6. Transfer to a large bowl, sprinkle with Parmesan cheese and extra red pepper flakes if desired. Enjoy!
