Description

An easy and delicious meal. My favorite savory dish to date!

Ingredients

  • ¾ cups Balsamic Vinegar
  • 3 Tablespoons Garlic Basil Butter
  • ½ whole Red Pepper, Chopped
  • ½ whole Sweet Onion, Chopped
  • ½ cups Chopped Mushrooms
  • 1 pound Gnocchi (fresh Or Packaged)

  • FOR THE GARLIC BASIL BUTTER:
  • ¼ cups Softened Butter
  • 1 teaspoon Fresh Basil
  • 1 teaspoon Minced Garlic (or More/less)

Preparation

Heat a small saucepan over high heat and add balsamic vinegar. Allow vinegar to come to a boil them immediately reduce to a simmer. Simmer until vinegar reduces by half of the amount, about 8–10 minutes. Set aside and let cool.

Heat a skillet on medium-low heat and add 1 tablespoon garlic butter. Add chopped peppers, onions and mushrooms and saute until soft, about 5 minutes. While veggies are cooking, boil water for gnocchi and cook according to directions; they only take a few minutes so make sure the veggies are almost finished cooking.

Drain gnocchi and add to the veggies in the skillet. Add the vinegar reduction and remaining garlic butter and stir to combine. Top with parmesan if desired. Serve and devour!

For the garlic basil butter:
Combine ingredients in a bowl and mix to combine.

Mouth literally watering….this sounds fabulous! My son has decreed that it needs to supercede tonight’s dinner plans. :)

This is so interesting! The gnocchi almost looks like shrimp because of the balsamic glaze. Sounds delicious.

Ok, I’ll admit it…I was skeptical about this recipe but my 13 yo son was SURE it was going to be great since it combined two of his favorite things…gnocchi and balsamic vinegar. Oh my goodness was he right!!! We used ricotta gnocchi that we made and froze last month and then made the rest exactly as written. FABULOUS!!! Amazing flavors and textures! I’m sorry that I ever doubted!! ;)
