Description

This is an easy week night meal that is great for using up pantry items! I like to use brown rice pasta, as it’s healthier and tastes just as good as regular pasta, and better than whole wheat pasta.
I like to throw in whatever I have in the fridge so this is recipe isn’t set in stone, mix it up!

Ingredients

  • ½ bags Brown Rice Pasta Fusilli Or Penne
  • 1 can Good Quality Tuna
  • 1 jar Roasted Bell Peppers, Sliced
  • ⅓ cups Extra Virgin Olive Oil
  • ¼ cups Kalamata Olives, Pitted And Sliced
  • 2 sprigs Green Onion, Sliced
  • 1 clove Garlic, Minced
  • 1 bunch Fresh Spinach
  • 1 Tablespoon Balsamic Vinegar
  • 2 teaspoons Salt
  • 1 teaspoon Red Pepper Flakes
  • ¼ cups Crumbled Feta (optional)

Preparation

Boil water for the pasta and add the 2 teaspoons of salt to it. Add the pasta once it comes to a boil.

In a large bowl, flake the canned tuna and add the remaining ingredients, except for the feta cheese, if using. Toss together. When pasta is cooked, add a tablespoon or two of the pasta water to the bowl of tuna. Drain the pasta and add it to the bowl as well.

Toss together and adjust seasoning to taste; it may need more olive oil or if you like the spice, more red pepper flakes. Top with the feta if using, and enjoy!

I love this recipe! It is so easy and delicious. Perfect for a weeknight meal and it has been especially handy during Lent. My whole family loves it.
