Description

Want to eat fried chicken without the accompanying guilt trip? Well, so do I. This won’t fool you into thinking mama fried it in her cast-iron skillet, but it’s so flavorful, crispy, crunchy and good that you might forget about fried chicken’s naughty ways altogether!

Ingredients

  • 2 cloves Garlic, Minced
  • 8 ounces, fluid Plain Low-fat Yogurt
  • 2 cups Bread Crumbs (plain, Panko, Or Homemade)
  • 1 teaspoon Kosher Salt
  • 1 Tablespoon Old Bay Seasoning
  • 1 Tablespoon Onion Powder
  • 2 Tablespoons Fresh Parsley, Minced
  • Freshly Ground Black Pepper
  • 4 whole Bone-in Chicken Thighs Or Small Breasts, Skinned And Trimmed Of Fat

Preparation

Preheat oven to 425ºF. Grease a baking sheet.

In a large bowl, mix garlic and yogurt together. In a shallow bowl, mix bread crumbs with salt, old bay, onion powder, parsley and freshly ground black pepper (lots).

Trim any remaining fat from chicken thighs/parts, then throw them in the big bowl with the yogurt. Stir well to evenly coat the pieces. One at a time, remove the pieces, roll in prepared crumbs, and place on the prepared baking sheet. Lightly coat the tops of the thighs with cooking spray.

Bake thighs at 425ºF for 40–45 minutes or until juices run clear (or they reach 165ºF on an instant-read thermometer). Let cool slightly, then serve.

Loved this recipe! Kept everything the same except I only used 1 cup of breadcrumbs because I ran out, and really enjoyed it :)

Tried this last night and it was actually very good. I upped the spices, used a bit more garlic because that’s how we like it, and found the chicken moist and tasty. Will definitely use this again, especially since it was my first go with greek yogurt and really like it!

Excellent. I added extra of the spices based on the first review and it was perfect. Love how the yogurt keeps the chicken so moist and juicy and the Panko crumbs give it great crunch. Will definitely add this to the rotation, the whole family loved it and it’s a much healthier alternative to fried chicken.

This is good but next time I’ll definitely add some cayenne and red pepper flakes for some spice! :)
