Description

Dinner: From fridge to fabulous in 20 minutes.

Ingredients

  • 1 pound Linguine Or Other Long Pasta
  • 1 head Broccoli, Trimmed Into Bite Sized Pieces
  • 2 Tablespoons Olive Oil
  • 4 cloves Garlic, Minced
  • 4 pieces Anchovy Packed In Oil
  • 2 Tablespoons Small Capers In Brine
  • 1 pound Medium Shrimp, Peeled, Thawed And Deveined
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Fresh Ground Black Pepper
  • ¼ teaspoons Crushed Red Pepper Flakes, Or To Taste

Preparation

Bring a large pot of salted water to a full rolling boil. Add the pasta and cook according to package directions.

When there are 3 minutes left in the cooking time, add the broccoli to the pot. When the pasta is done drain the broccoli and the pasta, place in a large shallow serving bowl and set aside.

Heat the olive oil in a large heavy skillet over medium heat. Add the garlic and the anchovies and the capers (with a bit of their juice) and cook for 1-2 minutes stirring constantly. The garlic will turn golden and the anchovies will soften.

Add the shrimp and stir for 1-2 minutes just until shrimp starts to turn pink.

Pour the shrimp mixture over the pasta and broccoli.

Season to taste with kosher salt and black pepper. Toss well to combine.

Sprinkle with crushed red pepper flakes , or pass them at the table.
